The last time award-winning Chef Damon Amos was in Singapore he made such an impression with his cuisine at The Prime Society that the only natural course was to invite him back as executive head chef. As the apprentice of one of Melbourne’s best restaurateurs Roberto Scheriani, he became a passionate believer in having discerning produce knowledge. Under his lead, Brisbane’s Cha Cha Char Steak Restaurant received The Australian Restaurant & Caterer’s Association's Best Steak Restaurant in Australia Award from 2004 to 2007. Chef Amos’s insatiable curiosity has seen him unearth age-old techniques and experiment with new and fresh ingredients to create true gourmet masterpieces.
