Gräflich Castell'sche Delikatessen prides itself on a long family tradition of producing farmed and sustainably fished products to the highest quality and environmental standards. Based in the heart of beautiful Allgäu, at the foot of the Bavarian Alps, in Griestal the farm has been producing some of the world’s finest fresh and smoked fish for over sixty years.

At the Gräflich Castell'sche fish farm in Griestal our trout grow slowly in the crystal-clear cold spring water, which streams direct from the Bavarian Alps, providing the optimal growing environment. The difference in our products starts with the handling of our fish and by the use of sustainable feed and natural aeration methods. All fish are handled with care which ensures less stress on the animals and produces a premium end product. Also specialised in moking Loch Duart salmon, we gently cold smoke the Loch Duart in our facility over a mixture of cherry and oak wood according to traditional smoking methods, which allow for these exquisite Scottish salmon to mature into something special.

The Castell/Faber-Castell family empire is divided into three main companies: A.W Faber-Castell – one of the world's largest manufacturers of pens, pencils, office and art supplies, as well as high-end writing instruments and luxury leather goods. The Fürstlich Castell’sches Domänenamt is one of the Germany’s largest private and oldest wineries with seven single vineyards located at the heart of 70 hectares of land set in Castell which are influenced by the continental climate, the Keuper Soil of Franconia (sediments of an European Ocean from 250 million years ago) and their position on the slopes of the Steigerwald forest which has been home to the Silvaner vine since 1695. To round-off and complement the existing portfolio of products from the family, we are proud to introduce our new assortment of non-food items that include an exclusive selection of knives, pans and all-round cooking equipment to suit all lifestyle needs.
