Despite a tremendous amount of invaluable experience, Chef Gallina remains a humble and understated chef. Now the executive chef of OTTO restaurant, the last 30 years of his career has included heading some of the most recognised restaurants in the world. This has included the uber-chic Dolce & Gabbana Gold Restaurant in Milan and the BICE GROUP which opened fifteen restaurants worldwide including the BICE Ristorante. Sharing the benefits of his talents and success, he passes down his knowledge and skills by taking aspiring chefs under his guidance, and is vice president of the GVCI, an association of Italian chefs worldwide.
