Signature Modern Chinese creations include Braised Foie Gras with Crispy Onion Pancake, Pan-seared Hokkaido Scallops with Fennel Seeds, Braised Beef Brisket topped with Chilled Superior Consommé Gelo, Oven-baked Lobster Bisque with Seafood in a Young Coconut and Braised Assorted Seafood with Black and White Glutinous Rice in Lobster Bisque.
