It is with the benefit of having worked under numerous Michelin starred chefs in Paris that Chef Frédéric Colin heads up Brasserie Les Saveurs at The St Regis. Born in Paris, Chef Colin apprenticed under two-Michelin-starred chefs Bernard Joinville and Jean-Marie Meulien, as well as chef de partie under the famous Christian Lesquer at the three-Michelin-starred restaurant, Restaurant Ledoyen. He also worked in French Polynesia at the St Regis Resort Bora Bora where he opened three remarkable dining destinations including Jean-Georges Vongerichten's signature restaurant. As executive chef at Brasserie Les Saveurs, Chef Colin serves up traditional and modern French cooking, delighting diners with even the most discerning palates.
