At the helm of the Shang Palace kitchens is Master Chef Peter Tsang who has over 30 years’ experience in the industry. Tsang hails from Hong Kong, the undisputed Cantonese cuisine capital of the world. He has worked in Hong Kong, Shanghai and Singapore with various independent restaurants and hotels, and was formerly the executive chef of Shang Palace before he ventured to Tokyo, Japan, where he held the position of culinary director at the Imperial Hotel’s Peking Chinese Restaurant. He also worked as chief culinary consultant of the Crystal Jade group of restaurants prior to rejoining the Shangri-La Hotel, Singapore in May 2007.
Tsang is not only highly skilled in the art of Chinese cooking and products but also in the history of China. He is constantly learning and upgrading his skills and knowledge, exercising creativity and interacting with his guests to gather feedback so as to improve.
