The newcomer of Singapore’s hospitality scene, St Regis has certainly brought in the big guns to establish itself as the premium hotel in the local hospitality scfene. Newly transferred from the exclusive St Regis Resort Bora Bora in French Polynesia, Frédéric Colin brings with him the experience gained from working under numerous Michelin-starred-chefs in Paris.
Colin has apprenticed under two-Michelin-starred chefs Bernard Joinville and Jean-Marie Meulien in Paris, as well as the three-Michelin-starred restaurant, Restaurant Ledoyen, as chef de partie under the famous Christian Lesquer.
