Proving to the world that locally trained chefs are just as good as those from famed culinary schools overseas, Dennis Sim has certainly done the country proud. Having graduated from SHATEC in 1997, Sim has managed to outdo himself over the past eleven years by consistently coming up with dishes that amaze and impress.
Learning his craft at Michelangelo’s Restaurant Group for three years under the ’big man’ Angelo Sanelli himself, Sim was offered a position as chef de partie in the sister restaurant, Original Sin. Sim enjoys putting innovative culinary concepts to put his skills to the test. Recently he even poured his creativity into classical Chinese mooncakes by replacing the traditional lotus seed paste filling with candied fruit and almond-studded ricotta cheese and honey. You can never be sure what Sim is up to next!
