With its quiet elegance underpinned by exceptional French cuisine and warm service, Absinthe continues to make its mark in Singapore’s fine dining scene. Since its debut in 2008, only the choicest cuts of meat, freshest seafood and garden greens are selected and transformed into tantalizing dishes under the culinary finesse of Executive chef-and-owner François Mermilliod. The result – tradition French fare with a modern twist, inspired by Chef Mermilliod’s travels across France, the Caribbean, United Kingdom and Asia. Complementing the overall Absinthe experience is General Manager and co-owner, Vincent Jaureguiberry, whose refined service is reinforced with his exceptional wine knowledge. Absinthe’s new premises along Boat Quay presents a chic yet classic atmosphere, with a conducive dining chamber, four private rooms and terrace riverfront dining – the perfect setting for a convivial and delectable dining experience altogether.
