Upon completion of his studies, Chef Rodrigo de la Calle gained experience by being mentored in some of the most prestigious restaurants in Madrid such as L´Hardy, Goizeko Kabi, Romesco and Lur Maitea. In 2000, Chef Rodrigo´s professional path took him to La Taula del Hotel Milenio in Elche where he met botanist Santiago Orts, manager of the famous Gardening Centre -Huerto del Cura-. His influence would change Chef Rodrigo´s perception of the vegetable world forever. His cooking style took a 180 degree turn and gradually incorporated vegetables unknown by most of his guests in his dishes. This represented the beginning of an upcoming trend: Gastrobotany. In collaboration with Santiago Orts, Chef Rodrigo has developed the concept of Gastrobotany presented at the International Community of Gastronomy in Madrid Fusión 2009, a culinary vision which claims hardly known vegetable species from Elche´s orchard such as earth anemone or citric caviar among others. Since then Chef Rodrigo has been given important awards among the most significant are The New Revelation Chef in Madrid Fusión 2009, Award Bacalao Giraldo, and Best Restaurant in the Region of Madrid by the Metropoli guide. Rodrigo de la Calle restaurant received its first Estrella Michelin on November 24, 2011. Hailing from Aranjuez, near Madrid, Chef Rodrigo carries perfectionism to the extreme. His dishes are perfectly balanced, each a little concerto of flavours in which every element retains its own identity while playing its part in the overall harmony.Specialising in natural food based on the use of uncommon plant species, Chef Rodrigo uses them as ingredients in his cooking to create dishes that are both healthy and delicious. |
