Since its debut in 2008, only the choicest cuts of meat, freshest seafood and garden greens are selected and transformed into tantalizing dishes under the culinary finesse of Executive chef-and-owner François Mermilliod. The result – tradition French fare with a modern twist, inspired by Chef Mermilliod’s travels across France, the Caribbean, United Kingdom and Asia. Complementing the overall Absinthe experience is General Manager and co-owner, Vincent Jaureguiberry, whose refined service is reinforced with his exceptional wine knowledge.
