Culinary school was a natural choice for Chef Francois Mermilliod; whose love for food stems from his weekly visits to various restaurants during his childhood. Armed with various experiences from the Caribbean, United Kingdom and Australia, Chef Mermilliod returned to Singapore to spearhead the opening of DUO Restaurant where he was nominated as a finalist at the 2004 World Gourmet Summit Awards Of Excellence Meat & Livestock Australia Rising Chef of the Year and the Christofle New Restaurant of the Year. The go-getter chef, together with the owners of OSO Ristorante and Philippe Pau officially opened the doors of Absinthe in late December 2008 where he now helms the kitchens.
