Even though he started out his career in banking, it was not long before Chef Brian Cleere discovered his true calling and enrolled into the Dublin College of Catering to pursue his love for cooking. From then on, Chef Cleere has worked for several notable establishments, such as the Park Hotel Kenmare in his homeland and the award-winning Mietta’s in Melbourne. Chef Cleere’s vast experience allows him to draw on an exciting array of different cultures for inspiration that is reflected in his luscious international cuisine served as the executive chef of Grand Hyatt Singapore.
