The most revered pastry chef in France, Pierre Hermé began his career at the tender age of 14 as an apprentice to Gaston Lenôtre. He opened his first shop in Tokyo in 1998 with business partner Charles Znatv, followed by Salon de Thé in 2000. Following that, Hermé opened several other shops in Tokyo and Paris.
