Cooking at home for his family of ten when he was young taught Lucas Spoel lessons that would benefit him for life. Juggling the preferences of his family gave him sold grounding in managing the different expectations of his customers he serves now.
After 20 years as a chef, Spoel is now the executive chef at InterContinental Singapore, overseeing all culinary operations and menus for Olive Tree, Aroma, Man Fu Yuan, KO, Lounge, Victoria Bar and Aqua Pool bar as well as the banqueting department. Prior to this, he has cooked at award-winning restaurants and hotels in Australia, Korea, the Netherlands and New Zealand. Spoel has also won many awards, such as the MLA Black Box Culinary Challenge in August 2007.
