Michele Pavanello’s fun and spirited personality is clearly reflected in the storm of Italian dishes he whips up. Pavanello takes the traditional Italian cuisine to beyond its original conception with an innovative use of spices, herbs and seasoning, shaping a very honest and straightforward gastronomic dish with delicate flavours.
His creative experimentation with native Italian ingredients is perhaps influenced by his wealth of experience all over the world. Pavanello stepped into the culinary arena at a young age og 15, spent the next few years learning the ropes and went on to showcase his culinary skills as a dmi chef de partie on board the luxurious cruise ship MV Royal Princess. He had also expanded his culinary influence at the renowned Ristorante Bice in London and The Palace of the Lost City, one of the finest and extraordinary hotels in the world.
