OPENING EVENT

The Opening Event is a dazzling display of Singapore’s finest culinary talents. The launch pad of the World Gourmet Summit, it welcomes Masterchefs, Winemakers, Special Guest Chefs and its overseas participants. It will also showcase signature cuisines from 12 of Singapore’s top restaurants. The Opening Event will also mark the exclusive feature of wines from Beringer Blass Wine Estates.

Proceeds will be contributed to the Awards of Excellence Scholarship Fund.

GOURMET HERBAL CUISINE WORKSHOP

On top of eating healthily, we need to source alternative nutrients for our bodies to function at its peak. For centuries, the Chinese have turned to the use of natural herbal remedies in their daily meals as nutritional supplement. Eu Yan Sang, a name we have come to relate almost immediately with quality Chinese herbs will present a culinary workshop that leads audience through the how-to of herbal cooking. Highly esteemed chef Chan Kwok of Hua Ting will showcase his culinary finesse in three herbal recipes at this workshop.

Cuisine Focus
Highly revered guru Edward G Leonard will lead a session for the culinary professionals. Called “Making Food Dance”, Chef Leonard will show and share with four dishes, the importance of flavour, texture and product composition. The dishes presented include:

• Tomato Tartin, Frisee, Tomato Syrup, Basil Reduction
• Fillet Mignon Roast with Crispy Fresh Bacon, Barely Jus and Red Carrots
• Halibut pan roasted on a Sweet Onion and Potato Tart,
  Tomato Confit, Bay Spiced Shrimp and Asparagus Emulsion


In addition, watch out for Chef Leonard’s signature creation featuring Norwegian Salmon. Jerome Dubois, demonstrator and ambassador for Cacao Barry will also take this opportunity to introduce the new Cocoa butter Mycryo™ which offers the F&B industry a more effective alternative to cuisine preparation.
