Chung Lap Fai
SINGAPORE – Master Chef Lap Fai joined the Orchard Hotel Singapore in August 1997 as Assistant Masterchef and was promoted to Masterchef in 2007. Recently he was honoured with a prestigious award - Asian Cuisine Chef of The Year at the World Gourmet Series Awards of Excellence 2014.

Chef Lap Fai counts his love for food as his career’s catalyst which captivated his interest to become a chef.  The young Lap Fai started his industrious career at the age of 17 as an apprentice in Hong Kong.  Fuelled by a thirst for adventure and a passion to travel, he came to Singapore in 1991 and worked at a couple of popular Chinese restaurants before joining Hua Ting at Orchard Hotel Singapore.

Customer’s satisfaction is what Chef Lap Fai holds close to his heart.  His signature style is a blend of traditional Cantonese cooking methods coupled with unusual combinations of ingredients to produce unique Cantonese dishes with a twist.

His specialty dishes include Braised Hokkaido Fresh Scallop with Winter Melon, Deep-fried Yam stuffed with Sea Perch coated with Salad Sauce accompanied with Chilled Lobster marinated in Sake, Braised Superior Bird’s Nest with Egg White and Cream of Spinach, Baked Rice with Seafood in Whole Capsicum topped with Portuguese Sauce, Steamed Prawns in Chinese Wine and Chicken Sauce.  

Guests can expect to savour a voyage of flavours using the freshest ingredients in his upcoming creations.
