He loves the idea of bringing out the flavours of fresh ingredients and the combustion of spices and herbs. He started his amazing career at the age of 24 full of passion for the culinary arts.
He thrives through challenging himself to reach new heights and to take on new challenges internationally like Taiwan, Australia, New Zealand, Malaysia, Indonesia, Singapore and Thailand, Laos, Cambodia and Vietnam. Chef Chatchai believes in the simplicity and showcasing of natural flavours of the freshest ingredients, spices and herbs. Dedicated to sourcing for the highest quality and healthy produce, Chef Chatchai knows the precise balance of flavours that personify the true taste of authentic ‘nutraceutical’ Indochinese cuisine. His impressive career also includes having IndoChine’s distinguished clientele like Singapore’s late Minister Mentor, Lee Kuan Yew, late President Nathan, Foreign Affairs Minister George Yeo; top dignitaries such as British Prime Minister Tony Blair, Henry Kissinger; royalties like the King and Queen of Sweden, Prince Albert of Monaco, Princess Anne and of course, celebrities like Sting, INXS and Bollywood iconic superstar Amitabh Bachchan. |
