Chef Francis Chong started his culinary career through perseverance and hard work and has built an impressive resume ever since. He rose from a 3rd Wok at Ng Tiong Chuan Seafood Restaurant to a Food Auditor at Long Beach Seafood Restaurant prior to his appointment as the new Executive Chinese Chef for Peach Blossoms. Naming a few of his awards and accolades, Chef Chong was the outstanding Gold Medallist for both Personal and Team categories for The World Golden Chef Competition 2010, won Most Outstanding Award for Red Majesty Chefs Cup Challenge 2011 and the Five Star Gold Award for the Hong Kong Gourmet Master Chef 2012. With 28 years of experience under his belt, Chef Chong, has also visited various countries in Canada, Indonesia and China to expand his culinary knowledge as well as developing his speciality, Fresh Seafood. Recognised as one of the top chefs in Singapore, Chef Francis Chong’s specialises in fresh seafood cuisine. His signature Cantonese dishes include Double-boiled Crocodile Palm Soup with Morel and Fish Maw, Deep-fried Prawn Coated with Mayo and Mixed Nuts, “Dong Po” Pork Ribs with Honey Sauce, Fragrant Smoked Duck, Stir-fried “Hong Kong” with Crispy Shredded Squid and Anchovies and Wok-fried “Yuan Yang” Broad Rice Noodles with Assorted Seafood.
