Tim Lau
Chef Tim Lau always knew he had a natural inclination towards cooking but only truly realised he had both the skills, attitude, tenacity and determination for a culinary career after working as a cook in Flamingo Hotel By The Lake, Kuala Lumpur.

Hungering for more experience, he completed his diploma in Hotel & Catering and graduated from Flamingo International College in 2007.

Like any good underdog story, Chef Tim has had more than 10 years experience of specialising in American and European cuisine mostly by learning from the bottom rungs as a cook, then climbing up his way to junior sous chef up to being leading chef in Coffee Club Singapore.

Finally, he has been with Spruce for close to 7 years. With the guidance of many head chefs before him, he has swiftly mastered the skills of what it takes to be in his admirable position currently.
