Daniele Sperindio
Chef Daniele Sperindio began working in restaurants at the age of 13 in his native Genoa, Italy. He trained at the Professional Institute Marco Polo and continued to work at a number of restaurants in the region before moving to Paris and Monte Carlo. He returned to Genoa as a sous chef at Michelin-starred Antica Osteria del Bai. He later moved to the US to work in fine dining restaurant Il Gabbiano in Miami, Florida, and received his intermediate Sommelier certification from the United States Sommeliers Association (USSA).
He moved to Singapore in 2012 to expand his knowledge of Asian flavours and culture, holding positions at Alkaff Mansion Ristorante and Da Paolo Bistro Bar at Rochester Park before joining Open Door Policy in early 2014 as Head Chef. As of July 2015, he has also been appointed as Head Chef at Open Farm Community. |
