Ishikawa Prefecture, found at the center of Japan, is surrounded by the sea on three sides and at the foot of Mt. Haku, one of Japan’s three most famous mountains alongside Mt. Fuji. It is blessed with great tracts of cultivated land and natural scenery. Also blessed by the four seasons - Spring, Summer, Autumn, and Winter – Ishikawa is widely regarded throughout Japan as a treasury of food ingredients. Each season, seasonal varieties of fish and vegetables are harvested from the sea and mountains and used as unique and delicious food ingredients. The harvesting of these food ingredients is carried out using natural techniques that carefully maintain harmony with the land. These techniques have been passed down from generation to generation and are so highly regarded that Ishikawa was recognized as a site of Globally Important Agricultural Heritage Systems (GIAHS) by the United Nations in 2011. To bring out the flavors of our ingredients, Ishikawa Prefecture’s unique Food Ingredient Processing technique is used, taking advantage of the pure water we get from our mountains in the production of miso and soy sauce, as well as in the brewing of our world-renowned sake. Using techniques with a long history and refined traditions, a chef then skillfully combines these ingredients, food processing techniques and Japanese tableware to artistically coordinate a meal. The result is Ishikawa Prefecture’s very own Kaga Cuisine, or what some may call Supreme Japanese Cuisine. Ishikawa, along with Kyoto are said to be the only areas in Japan where this culture of complete synthesis of food, supported by history and tradition every step of the way, still remain.
