Three-Michelin-starred Chef Bruno Ménard is a stern believer of ‘neo-classic’ cuisine, one whose culinary ingenuity is of utmost excellence. It’s no wonder that his Tokyo restaurant, Restaurant L’osier, is constantly awarded the highest accolades year after year. Chef Ménard keeps a line-up of 45 staff members in his restaurant to attend to the guests at his 40-seater restaurant. This is an arrangement he laments as a reasonable ratio in Michelin-starred restaurants.
