Cooking at home for his family of ten when he was young taught Lucas Spoel lessons that would benefit him for life. Juggling the preferences of his family gave him solid grounding in managing the different expectations of his customers he serves now.
After 30 years at various award-winning restaurants and hotels in Australia, Korea, the Netherlands and New Zealand, Chef Spoel is now the executive chef at InterContinental Singapore, overseeing all culinary operations and menus for Olive Tree, Aroma, Man Fu Yuan, KO, The Lounge, Victoria Bar and Aqua Pool bar as well as the banqueting department. Chef Spoel has also won many awards, such as the MLA Black Box Culinary Challenge in August 2007.
Chef Spoel was recently the fine dining chef de cuisine at Grand InterContinental, Seoul where he managed all aspects of food operations in fine dining and signature restaurants such as Table 34 and Silk Road Club designed by Toni Chi.
