Hailing from La Varenne at the Raffles Resort located at Canouan Island, The Grenadines, chef O’Neill loves his pristine workplace and as a result, has created dishes that boast of clean and light flavours, a reflection of his Caribbean surroundings. Born to Irish and Trinidadian parents, chef O’Neill has worked in London, France and Germany and till today, he is constantly being inspired. The finale of World Gourmet Summit 2007: Gourmet Barbecue with Paulaner Beer caused a sensation at the Emerald Pavillion at Siloso beach, Sentosa, with its lively crowd, live cooking stations and a loud and jazzy live band! A vast array of dishes on the buffet spread—the best selection from participating hotels and restaurants—were presented as guests feasted to their heart’s content! Not only was there good food, but an endless flow of drinks and ice cream! As the night wound down, the excitement of the crowd did not dwindle as they grooved to the music and later headed over to Café del Mar to party the rest of the night away.
