A graduate from the Hotel Management and Catering Technology School in 1984, Sovani have worked in hotel chains across India and in 1986, was appointed the head chef at Hotel Jaipur Ashok and Hotel Samrat in New Delhi. With twenty-three years of international experience, Sovani leads the local gourmands through a rediscovery journey of regional Indian cuisines like Malvani and Lucknavi, bringing Indian cuisine to a new height.
