A graduate from the Hotel Management and Catering Technology School in 1984, Sovani have worked in hotel chains across India and in 1986, was appointed the head chef at Hotel Jaipur Ashok and Hotel Samrat in New Delhi. With twenty-three years of international experience, Sovani leads the local gourmands through a rediscovery journey of regional Indian cuisines like Malvani and Lucknavi, bringing Indian cuisine to a new height.
Bagging awards like the best Asian cuisine chef at the Hospitality Asia Platinum Awards 2006-2007 and a gold medal at the Gourmet Hunt 2004, Sovani has also written his own books and done several television shows. Says Sovani, he is here on a mission – to globalise and showcase modern Indian cuisine.
