INSPIRATION

“I owe everything that I am to my family, especially my grandmother, Odette. She showed me how the most remarkable dishes can come from the purest ingredients and taught me the importance of adding that ‘little something’ to create dishes that excite the palate and fill the heart.

Her devotion to people and ability to demonstrate love through food continue to inspire the Odette experience.”

Cuisine

“We hope to make Odette an honest and welcoming experience for everyone. This is where every ingredient has its place and purpose, and is treated with the utmost care to highlight its purest flavours. Beyond creating signature dishes, it is our passion to source for the very best produce to underscore our cuisine.”

Odette serves modern French cuisine guided by Chef Julien’s lifelong respect for seasonality, terroir and artisanal producers sourced from boutique producers all over the world. While his approach is underpinned by the principles of French cuisine, his years in Asia have infused his approach with a sense of place.

WINE

The discovery of exquisite wines, paired with exceptional food and shared among friends, is one of life’s greatest pleasures.

Our wine list is a celebration of the men and women who have devoted their lives to perfecting their signature; each with an almost fanatical approach to terroir, harvest and grape.

ART

Led by Singaporean artist, Dawn Ng, the overall creative direction stems from a deep understanding of Chef Julien’s culinary philosophy.

Titled A THEORY OF EVERYTHING, the body of art explores the visual beauty of raw ingredients from Chef Julien’s kitchen, broken down and re-imagined into a surreal universe of shapes and forms that float and settle, drift and pirouette.

These deconstructed, magnified images of Chef Julien’s most precious ingredients inform every aspect of Odette’s creative design, including the aerial installation – the centerpiece of the main dining hall.

INTERIOR DESIGN

Designed by Sacha Leong of Universal Design Studio, the interior reflects Chef Julien’s approach of keeping the integrity of ingredients with a soft color palette and décor that is comfortably elegant, all while respecting the historic and iconic National Gallery location.

A key feature is the glass-enclosed kitchen, where diners have the opportunity to witness the chefs at work, reflecting the openness and honesty of Odette that is central to the entire dining experience.
