An Italian native hailing from Florence, Italy, Chef Niccolo’ has amassed more than a decade of culinary expertise including stints at Michelin-starred restaurants around the world. His innate passion for cooking and his emphasis on the use of finest seasonal produce are the key ingredients to his gastronomic creations.
After graduating with a degree in Food and Beverage, Chef Niccolo’ began his culinary career at Osteria di Passignano, one Michelin-starred restaurant in his home country where he gained in-depth exposure to the kitchen and assisted different station chefs. His next role as Commis Chef at Armani Hotel Dubai marked his first foray overseas where he expanded his cooking skills and techniques, and was later promoted to the position of Demi Chef de Partie during his tenure in Dubai. His desire to explore further into the world of culinary took him to London where he honed his craft at highly acclaimed dining destinations namely The Waterside Inn, Launceston Place, and later moved on as Chef de Partie at the illustrious La Dame De Pic. His quest for new challenges brought him to Singapore in 2019 where he joined Mandarin Oriental, Singapore as Sous Chef at Dolce Vita, the hotel’s Italian restaurant. Today, Chef Niccolo’ helms Dolce Vita as Chef de Cuisine and in addition to developing menu and inventing new dishes, he is dedicated to leading his team to greater heights and curating exceptional Italian dining experience.
Outside of the kitchen, Chef Niccolo’ never hesitates to savour different cuisines to uncover unique flavours and techniques which he brings back to his working space to experiment new creations. In his leisure time, he loves to catch up with friends over a football game or cycling.
