Lewin Terrace: Ishikawa Prefecture Dinner

Ishikawa Prefecture is located in Central Japan. It is surrounded on three sides by the sea and rests at the foot of Mount Hakusan, which is one of Japan’s top three mountains, along with Mount Fuji. It is also blessed with a vast countryside and abundant nature. Being privileged to experience the four seasons, spring, summer, autumn and winter, Ishikawa Prefecture has a wealth of seasonal ingredients from the sea and the mountains, making Ishikawa known as Japan’s treasure trove of ingredients. These ingredients are highly valued throughout all of Japan. These ingredients, which are produced in harmony with nature, are the livelihood of the locals, a livelihood that has been passed down the generations

Six years ago, for this very exact reason, Noto, the northern stretch of Ishikawa Prefecture was the first location in Japan to be awarded World Agricultural Heritage status by the United Nations. Furthermore, there are an abundance of attractions characteristic of Japan, including a food culture nurtured by the abundance of nature, many hot springs that are counted as some of the best in Japan, and traditional culture fostered by the history of Kaga-Hyakumangoku

For one night only, Chef de Cuisine Hiroyuki Shinkai will be preparing a special set menu featuring special vegetables and fish flown in all the way from this evergreen Japanese eden.
