One of Asia’s most internationally-celebrated chefs, Chef Justin Quek is famed for his expertise in French fine dining and his deep understanding of Asian cuisines. His Franco-Asian cuisine – borne of his Asian heritage and his extensive experience in Europe – is represented by signature dishes such as his foie gras xiao long bao, and lobster Hokkien noodles.

As a leading chef from Asia, he has served numerous politicians and dignitaries such as former Chinese president Jiang Zemin and Microsoft founder Bill Gates. He also famously cooked for all of Singapore’s founding prime minister the late Mr Lee Kuan Yew’s birthday dinners since 1993.

In 1994 Chef Quek, together with other business partners, started Singapore’s pioneer independent French fine dining restaurant Les Amis. The restaurant swiftly gained accolades from an international audience and put Singapore on the global gastronomic map. It also went on to nurture generations of Singaporean chefs in the art of fine French cooking, making it one of the most influential fine dining restaurant in Asia. In January 2004, he left Les Amis to explore the regional market. In six years, he operated as chef-owner of numerous fine-dining French establishments in Taiwan and Shanghai. In Hong Kong, Chef Quek also served as a professional consultant to multiple restaurants. In 2010, Chef Quek was invited by Marina Bay Sands alongside other international celebrity chefs to return to Singapore to open and helm as Principal Chef the 240-seat fine-dining restaurant Sky on 57.

A force of influence who has stayed in the forefront of the F&B industry for the past three decades, he continues to grow an international base of loyal followers with his distinct culinary style. In September 2016, he launched Grignoter – the first wine bar in Singapore and Southeast Asia to be endorsed and supported by the Bordeaux Wine Council (CIVB).
