Inspired by his mother and their daily cooking for his family, Chef Chaiyot has always been passionate about food. His culinary career began at the age of 25, working in his parent’s restaurant in Thailand. He learnt his cooking skills from watching cooking shows and when his mother was cooking.
Looking to gain experience in the kitchen, he began to travel within Indochina in order to understand the use of different spices, herbs and ingredients. He was captivated by the colours and smells of the Indochinese cuisine. Chef Chaiyot emphasizes on using only fresh and healthy produce like traditional fresh herbs, blue ginger or lemongrass which have good health benefits. His cooking style embraces the salty, sweet and tangy flavours of Indochinese cuisine without complicating the straightforward, unfussy and clean essence of Chinese fare. He has now with him more than 25 years of culinary skills and is constantly creating authentic ‘nutraceutical’ IndoChine cuisine. His dedication to the creation of healthy, authentic ‘nutraceutical’ cuisine Indochinese cuisine presented in different creative forms has earned him tremendous respect and recognition among Indochine’s distinguished clientele like Singapore’s late Minister Mentor, Lee Kuan Yew, late President Nathan, Foreign Affairs Minister George Yeo; top dignitaries such as British Prime Minister Tony Blair, Henry Kissinger; royalties like the King and Queen of Sweden, Prince Albert of Monaco, Princess Anne and of course, celebrities like Sting, INXS and Bollywood iconic superstar Amitabh Bachchan, |
