Chef Sandro Falbo joined The Fullerton Hotel Singapore and The Fullerton Bay Hotel Singapore as Executive Chef in June 2013, bringing with him extensive experience in the luxury hospitality industry. Chef Falbo`s versatility in the culinary arts is gleaned from his worldwide career that spanned 31 years through his traversing of prestigious restaurants and five-star hotels in Italy, England, The Bahamas, South Africa, The Middle East and Asia.

Born in Rome, where he studied hospitality management and had his first foray into the field of cooking by working at notable restaurants within the city centre at a tender age, Chef Falbo later uprooted himself and helmed the kitchens of renowned restaurants in Madagascar and Cape Town, as well as the acclaimed Bertorellis Restaurant in London. It was an eye-opening experience, and one that inspired him to innovate and further develop contemporary culinary techniques.

In 1996, Chef Falbo returned to Rome to join Rome Cavalieri, Waldorf Astorial Hotel & Resorts, one of the city`s premier luxury hotels. He was later sought to assume the position of Italian Chef at Hotel Intercontinental in Dubai, then Hotel Kempinski inBeijing from 1999 to 2003. Adding to his stellar track record, he joined the acclaimed Va Bene Restaurant in Shanghai as Executive Chef. Under his leadership, the restaurant soared to greater heights and won numerous accolades.

Chef Falbo then returned to the luxury industry in 2005, taking on the role of Executive Sous Chef, first with Four Seasons Great Exuma in Bahamas, and then Conrad Hotel in Hong Kong, where he continued to excel in the culinary world as well as further strengthen his management skills.

Prior to joining The Fullerton Hotel and The Fullerton Bay Hotel, Chef Falbo was executive Chef og Hilton Singapore. Well-versed in European, Chinese and Muslim cuisines, Chef Falbo displayed great culinary expertise and leadership supervising a team with diverse cultural backgrounds.

As the Executive Chef of The Fullerton Hotel and The Fullerton Bay Hotel, Chef Falbo now helms an outstanding award-winning culinary team overseeing a total of nine restaurants and bars, as well as banquet catering events. Chef Falbo takes pride in his work and contributes his talents through the array of cuisines available at both hotels- ranging from international buffets at The Fullerton Hotel`s Town Restaurant, authentic Italian cuisine at The Lighthouse Restaurant & Rooftop Bar, Chinese cuisine at Jade, and French bistro favourites at The Fullerton Bay Hotel`s La Brasserie. His homemade Pannettone has also garnered a loyal following, and is much looked forward to every Christmas by media and regulars.

He's had the privilege to work with many acclaimed Michelin-starred chefs through their guest stints at the various restaurants within the two hotels – luminaries such as Christian Le Squere, Jean Michel Roan, Alexandre Gauthier and Shinichiro Takagi.
