the king of chefs - a tribute to auguste escoffier
tippling club presents the king of chefs: an exclusive six-course dinner by chef-owner ryan clift, as an homage to auguste escoffier -- the legendary french restauranteur, chef, author, and culinary icon, who was best known for the development and popularisation of traditional french cooking methods. while training at the world-renowned claridge’s in london, ryan was under direct tutelage of executive chef john williams, a true champion of escoffier philosophy, who schooled him in the fundamentals of classic french cuisine. under chef williams, ryan gained invaluable insight and access to recipes and skills that he continues to incorporate into his own distinctive, progressive style of cooking today. up to 12 privileged guests may look forward to the king of chefs dinner, a truly thoughtful and elaborate sequence, where each dish is inspired by the history behind escoffier's decadent fare. the dinner will be held at bin 38, tippling club's private events and dining space, located above the restaurant. guests can look forward to dishes like the sarah bernhardt soup, a reinterpretation of escoffier’s indulgent gastronomic creations for the famous french actress and rumoured lover. it is a clarified roast beef and chicken consommé with bone marrow, black truffle and sous vide lobster tails.
