Lewin Terrace is a charming restaurant located on Singapore’s historic Fort Canning, housed in a heritage colonial black and white bungalow that was once the residence of a series of General Commanding Officers of the Fire Brigade. The restaurant’s contemporary design makes full use of natural light and space; and together with the historic ambience, makes it the ideal venue for all occasions from casual dining to business appointments and from romantic dinners to weddings and special events. In addition to delivering a menu of uniquely Japanese-French cuisine, at the heart of this restaurant is the renowned omotenashi, the fine art of Japanese hospitality and entertaining where guests’ needs are anticipated and service is delivered discreetly yet with precision. Heading the Lewin Terrace kitchen is Chef de Cuisine Ryoichi Kano, whose extensive training in French cooking techniques has inspired him to marry them with the meticulous artistry and preparation of Japanese cuisine, emphasising specially on the creation and harmonisation of fresh and seasonal ingredients. Using a produce-driven approach to create his dishes, the result is simply beautiful, elegant cuisine that is both modern and representative of both cultures. "Food has always been a great passion for me and I am a true advocate of the ancient Japanese custom of not wasting food to ensure the greatest respect to the ingredient. When it comes to cooking, I believe that timing is everything because it is the key to precision in food preparation,” said Chef Kano. “From my travels, I am fortunate to have gained a great deal of insight on the myriad types of ingredients and techniques that can be combined creatively into cooking – from the rich, vibrantly-coloured kyoyasai (Kyoto vegetables) to classic French and Italian techniques. I am very honoured to share my creations at Lewin Terrace." Adding another dimension to Lewin Terrace’s gastronomic experience is the contemporary alfresco bar, offering signature cocktails inspired by Fort Canning's famous Spice Garden and an exclusive range of sake from Japan. Amidst a beautiful historic location, Lewin Terrace is not just a dining destination but presents a distinctive venue for all occasions through the availability of a romantic terrace, function room for up to 80 people and private room for up to 20 people. |

sake samurai: an individual carefully selected by the esteemed japanese sake brewers association to protect the customs and traditions of sake, as well as japanese culture and to promote them internationally.
