Jordi Roca
Jordi, often referred to as the ‘sweet mind’, studied at the “Escola d’Hostaleria” in Girona and upon finishing his education he joined the team at El Celler de Can Roca. He refers to himself as a “postrero” (dessertier) because he is the youngest brother, who came to the world after his brothers and desserts come at the end of the menu.Jordi Roca earned his culinary stripes in the family restaurant, under the award winning Welsh Pastry Chef Damian Allsop. It was Allsop whom Jordi credits with teaching him the “hows and whys” of the restaurant world. He thrived and went on to become a pastry chef, at first putting forth his desserts to his brothers for their judgement, later collaborating with them. In 2000 when Allsop left the restaurant, Jordi became Head Pastry Chef. He has published a number of books including “Sweet Sensations” and “Los postres de Jordi Roca”. Jordi is the youngest brother and the one who closes banquets with a fresh and sweet aftertaste. For Jordi, if El Celler de Can Roca was one of his desserts, it would be ‘Anarchy’, a very complex and elaborate dessert, a chaos with dozens of different ingredients which the diner combines as they see fit, a chaos that generates new and personalised organoleptic experiences. Jordi Roca opened Rocambolesc, a dessert shop intended to be a window to the cuisine of El Celler de Can Roca, to invite the public at large to come and taste ‘what’s cooking’ in the restaurant; this is a place to experience the sweet sensations of El Celler de Can Roca. Like his brothers, Jordi Roca has received several awards including The ‘Paco Torreblanca Award’ for ‘Best Pastry Baker 2010’ by the Royal Academy of Gastronomy in 2010, Recognised by The guide Gourmetour for producing the ‘Best Dessert Menu’ and ‘Best Desserts’ in 2005, Named ‘Girona’s Best Pastry Maker’ in 2004, ‘Best Pastry Maker of the Year’ granted by the guide ‘El Millor de la Gastronomia’ in 2003. |
