Shakers & Brews Dinner Japanese craft beer infused Modern Asian cuisine and cocktail pairing Hosted by Coedo Brewery and KU DÉ TA Singapore KU DÉ TA and Ceodo Brewery invite you to Shakers & Brews Dinner, a unique beer-infused Modern Asian dining experience on 27 and 28 April 2015, featuring beer cocktail pairings with award-winning premium Japanese craft beer from Kawagoe, Saitama Prefecture. In the spirit of innovation, KU DÉ TA takes inspiration from the Beer Beautiful philosophy and masterfully crafts a dining and cocktail experience with Coedo beers at the Shakers & Brews Dinner. Helmed by Executive Chef Frederic Faucheux, KU DÉ TA’s signature Modern Asian cuisine encourages innovative flavours and textures, continually pushing the boundaries of traditional Asian recipes. With the Shakers & Brews Dinner, Chef Frederic elevates his signature dishes such as the pork belly lollipop and roast black cod with the rich aromatic flavours of Coedo Beniaka’s Sweet Potato Amber and Coedo Kyara IPL, and explores new creations like the Coedo Ruri pilsner-infused beef cheeks and beetroot broth with kaffir lime leaf and coriander. Be amazed by the mastery of Head Regional Mixologist Knut Randhem, as he shakes up six different beer cocktail pairings to complement the meal. The Coedo Shiro Hefeweizen is given a new life with the shiro fizz, with sake, chocolate liqueur, lillet and yuzu juice, while the classic beer cocktail is uplifted in the form of Coedo lagerita, a fusion of Coedo Ruri pilsner, Blanco tequila, fresh lime juice, rose flavoured honey syrup and green tea salt. The brewery’s signature sweet potato amber, the Coedo Beniaka, manifests itself as sweet potato flip, as Knut mixes the amber nectar with apple brandy, honey, nutmeg and egg. Attesting to its motto of being ‘Beer Beautiful’, Coedo introduces a world of delicate, profound, balanced and diverse beers through five varieties of beers that represent Japan’s traditional colours. Distinguished and artfully handcrafted with purely natural ingredients, Coedo beers fuses German brewing traditions with locally produced starches not only through wheat and barley, but with sweet potato, which is truly unique in the world and immediately earned the global reputation of creating a new beer category in Japan. Coedo beer have received rave reviews from connoisseurs around the world, with all five beers taking home trophies in 2009 world gourmet summit - shakers & brews dinner japanese craft beer infused modern asian cuisine and cocktail pairing hosted by coedo brewery and ku dé ta singapore welcome drink shiro fizz coedo shiro, sake, chocolate liqueur, lillet, yuzu juice beef cheeks and beetroot broth coedo ruri, kaffir lime leaf, coriander coedo ruri - pilsner coedo lagerita coedo ruri, blanco tequila, fresh lime juice, rose flavoured honey syrup, green tea salt *** pork belly lollipop coedo beniaka, baby bok choy, garlic, sweet potato coedo beniaka – sweet potato amber sweet potato flip coedo beniaka, apple brandy, honey, nutmeg, egg *** roast black cod coedo kyara miso, daikon, broccolini coedo kyara – indian pale lager ipl sour coedo kyara, vodka, yuzu juice, passion fruit, honey, liquorice powder *** grilled rack of lamb coedo shikkoku, curry leaf, balsamic, kai lan coedo shikkoku - aged dark lager ku dé ta boiler maker maple-infused ardbeg ten, maker’s mark, sugar, bitters, orange aroma. stirred as an old fashioned cocktail and served with coedo shikkoku as a chaser *** strawberry–pistachio crunch coedo shiro ice cream, crème plombieres praline coedo shiro - hefeweizen wheats ‘n fruits coedo shiro, mango cordial, chilli bitters, lemon oil |
