Bay Sushi is a cosmopolitan roll and sushi outlet operated by The Bay F&D. The Bay F&D began research into Singapore’s F&B market in 2010 and ventured into the competitive industry with TODAI’s first flagship restaurant in Southeast Asia. Bay Sushi is The Bay F&D’s 2nd brand development in May 2012 and it has since introduced a novel dining experience in The Shoppes at Marina Bay Sands. Bay Sushi can be differentiated from other Japanese oriented sushi restaurants in the region by its contemporary roll and sushi concept, the interior design fashioned with the theme of modern luxury, the fixed-top conveyor belt that presents both hot and cold dishes on coloured plates inspired by the famous bays in the world, as well as the innovative dishes created by its highly-talented chefs. |

Chef Jay has devoted more than a decade of his life to perfecting the art of creating Japanese delicacies and at the same time adding an international twist to his creations without compromising the taste of his creations. Chef Jay and his team will to take you on a gastronomical adventure this Spring, with dishes exclusive to Bay Sushi Singapore, inspired by one of the top places to visit in Korea – Jeju Island.
As Jeju’s main industries are fishing and agriculture, Bay Sushi has specially flown in the ingredients required for these creations directly from Jeju, including the fresh seafood that has been long associated with one of Jeju Island’s most distinct cultural traditions – the haenyeo or “sea women”. These women are renowned throughout the country for free diving 10-20 meters with no equipment to catch the freshest seafood, such as abalone, conch and octopus.
