In the early 17th century, a small order of monks, the Paulaner monks from S.Paolo, migrated from Italy to Bavaria. During the Lenten season, the monks were mandated to maintain abstinence of all foods other than bread and water. So an enterprising brother, Brother Barnabeus started to brew his beer, Salvator, in honor of Our Savior, and it became a tradition and the very first Paulaner beer. Paulaner strictly adheres to the Reinheitsgebot Purity Law of 1516, which mandates that only four natural ingredients can be used: malted grain, yeast, hops and water. Paulaner beers contain no preservatives or additives and are brewed with pure spring water. Paulaner is the leading Oktoberfest beer.
