Besides coming from a family of chefs and restaurateurs, Jean-Charles Dubois has also worked with numerous Michelin-starred restaurants in France. His dishes reflect strongly of cuisine du terroir, a return to the traditional rustic flavours. Working to incorporate the experience of his senses into every dish he whips up, Dubois’ distinctive culinary style and approach to food go well alongside the strong influence of classic French.


Dubois only uses the finest ingredients from the provincial produce, even to the extent of having the foods specially flown in. His close mentorship under chef-restaurateurs, Jacques and Laurent Pourcel, has also aided his aptness in producing gastronomic works.
