Young and talented, Dennis Sim, the executive chef of Zambuca Italian Restaurant & Bar, is an up and rising star in the gastronomic scene. Sim worked part-time at Michelangelo’s restaurant for three years upon graduating from SHATEC in 1997. This has given him an opportunity to learn from Angelo Sanelli himself, a great start into the culinary arena. With his innate leadership qualities and initiative, Sim was given a free rein in exploring the culinary field, and began to create new dishes himself.


Joining Zambuca in 2003, he became a hot favourite among his patrons with his preparation of meat, game and fish dishes from his personal recipes. His capability also helped the restaurant clinch the award of excellence for Best Western Cuisine Restaurant 2006-2007 at the prestigious Hospitality Asia and Platinum Awards in 2006.
