Mexico is a culinary adventure that any food lover should explore. Besides its rich gastronomic tradition, one can also enjoy the country’s abundant natural beauty, cultural diversity, luxury destinations and historic sites. People who visit Mexico discover that it goes far beyond its usual stereotypes. The real Mexico is a modern, vibrant country that simultaneously succeeds in preserving centuries-old traditions.
 
The gastronomy of Mexico is a perfect example of the coming together of the past and the present. In fact, in recognition of its ritualistic character and vibrant flavours that have been passed down for generations, Mexican cuisine was inscribed on the List of the Intangible Cultural Heritage of Humanity by UNESCO in 2010, making it one of the very few that have earned this distinction.
 
The uniqueness of Mexican gastronomy lies not only in its techniques, but also in its ingredients, many of which have influenced other world cuisines: Corn, beans, all kinds of chili peppers and capsicum, vanilla, cacao, red tomatoes, avocados and pumpkins, amongst others, all have their origins in Mexico.
 
Today, Mexican cuisine is thriving more than ever. Mexican chefs at home and abroad are re-interpreting time-honoured techniques, while artfully preserving the essence of traditional flavours. International food experts have recognised the versatility of Mexican gastronomy by including three Mexican restaurants on the 2016 list of ‘The World’s 50 Best Restaurants’, one of which was ranked No. 12. In addition, the Mexican Government launched an initiative in 2016 called “Ven a Comer” (Come eat!) which aims to spread the richness of the country’s gastronomy.
 
To this day, Mexican cuisine is a cultural asset that identifies and unites Mexicans across the globe. It also delights visitors by being an excellent way to discover Mexico.
