Chef de Cuisine Shawn Armstrong helms the signature restaurant of The Sentosa Resort & Spa, creating and serving a menu inspired by the sea. Prior to The Cliff, Chef Armstrong held senior positions in luxury resorts and seafood specialty restaurants worldwide including the famous American McCormick and Schmick’s Seafood Restaurant, the acclaimed Oyster & Wine Bar in Hong Kong and Taj Coral Reefs in Maldives. With years of experience in classical French cooking, Armstrong places utmost importance on freshness, seasonality of ingredients, artful presentation and striking a delicate balance between trends and personal style.
