A food-lover since childhood, François Mermilliod started working as a chef at the young age of fourteen. His career has since taken him around the world, with experience in the UK, Singapore and Australia. A finalist in The World Gourmet Summit Awards of Excellence 2004’s Meat & Livestock Australia Rising Chef of the Year and the Christofle New Restaurant of the Year with the restaurant DUO, his talents have not gone unnoticed. Chef Mermilliod uses his experience and talents to treat customers at ‘Absinthe’ to a modernised rendition of classic French cuisine.
